Fermented sugar and regular sugar the same?
Let’s say that fermented grapes are wine, is it the same with regular fresh grapes?

What does fermented sugar mean and how does it differ from regular sugar? 

Louis Pasteur is the inventor of the term ‘fermentation.’ Scientists used it for the first time in the 19th century to define a chemical process triggered by many organisms to derive energy from sugar and carry out their vital functions ‘Breathing without oxygen,’ we might say.

With yeast fermentation, bacteria and enzymes derive energy from sugar (glucose) in the absence of oxygen through a series of more or less long and complex chemical reactions. Isomaltulose for horses, also called CAVATINOS is a carbohydrate derived from sucrose (sugar) extracted from beets.

Brown sugar, which is the most common to consume, is also sucrose. In nature, it is found in honey and sugar cane.

What is Cavatinos?

Cavatinos is an analog of Isomaltulose.
Cavatinos is a trademark of Nutricheval AB, Sweden, and this is a raw material for the production of Sweet Bite.

Through a stabilized enzymatic preparation, the sugar is converted into CAVATINOS.
Its chemical name is 6-O- -D-glucopyranosyl-D-fructofuranose. It is a disaccharide essentially composed of a molecule of glucose and another of fructose.
The difference between sugar beet sucrose and isomaltulose is the chemical bond, which makes CAVATINOS a low glycemic index carbohydrate.

How the molecules react in the body?

Unlike other carbohydrates, such as glucose and table sugar, CAVATINOS prevents insulin spikes in the body. These insulin spikes creates energy too quickly for your horse and this energy also runs out too fast.
